Ingredients 

Main Ingredients

  • 4 cups cubed bread day-old or slightly stale
  • 2 large portobello mushrooms diced
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 cup vegetable broth
  • 2 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat the olive oil over medium heat. Add the onions and garlic, and cook until softened.
  3. Add the diced portobello mushrooms to the skillet and cook until they release their moisture and start to brown.
  4. In a large bowl, combine the bread cubes, cooked vegetables, thyme, sage, salt, and pepper. Pour the vegetable broth over the mixture and toss to combine.
  5. Transfer the stuffing mixture to a greased baking dish. Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the top is golden brown.
  6. Serve warm.
