  • 1 cup Strawberries hulled and chopped
  • 1 tablespoon Balsamic vinegar
  • 2 tablespoon Honey
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper freshly ground

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Season the pork tenderloin with salt and pepper.
  3. Place the pork in a baking dish and roast for 25-30 minutes, or until the internal temperature reaches 145°F (63°C).
  4. While the pork is roasting, combine strawberries, balsamic vinegar, and honey in a saucepan over medium heat.
  5. Cook, stirring occasionally, until the strawberries break down and the sauce thickens, about 10 minutes.
  6. Remove the pork from the oven and let it rest for 5 minutes before slicing.
  7. Serve the sliced pork with the strawberry sauce drizzled on top.
