Pork Tenderloin with Strawberry Sauce

- 1 lb Pork tenderloin
- 1 cup Strawberries hulled and chopped
- 1 tablespoon Balsamic vinegar
- 2 tablespoon Honey
- 1 teaspoon Salt
- 1 teaspoon Black pepper freshly ground
Preheat your oven to 375°F (190°C).
Season the pork tenderloin with salt and pepper.
Place the pork in a baking dish and roast for 25-30 minutes, or until the internal temperature reaches 145°F (63°C).
While the pork is roasting, combine strawberries, balsamic vinegar, and honey in a saucepan over medium heat.
Cook, stirring occasionally, until the strawberries break down and the sauce thickens, about 10 minutes.
Remove the pork from the oven and let it rest for 5 minutes before slicing.
Serve the sliced pork with the strawberry sauce drizzled on top.
