Ingredients

  • 1 lb Pork tenderloin
  • 1 cup Raspberries fresh or frozen
  • 2 tablespoon Honey
  • 1 tablespoon Balsamic vinegar
  • 1 teaspoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Season pork tenderloin with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat. Sear pork on all sides until browned.
  4. Transfer pork to a baking dish and roast in the oven for 20-25 minutes, or until internal temperature reaches 145°F (63°C).
  5. In a saucepan, combine raspberries, honey, and balsamic vinegar. Cook over medium heat until raspberries break down and sauce thickens, about 10 minutes.
  6. Let pork rest for 5 minutes before slicing. Serve with raspberry sauce.
