Transfer pork to a baking dish and roast in the oven for 20-25 minutes, or until internal temperature reaches 145°F (63°C).
In a saucepan, combine raspberries, honey, and balsamic vinegar. Cook over medium heat until raspberries break down and sauce thickens, about 10 minutes.
Let pork rest for 5 minutes before slicing. Serve with raspberry sauce.
