Main Ingredients
- 1 lb Pork tenderloin
- 1 cup Fresh blueberries
- ¼ cup Balsamic vinegar
- ¼ cup Honey
- 1 tablespoon Olive oil
- 1 teaspoon Salt
- ½ teaspoon Black pepper
Preheat your oven to 375°F (190°C).
Season the pork tenderloin with salt and black pepper.
Heat olive oil in a skillet over medium-high heat. Sear the pork on all sides until browned.
Transfer the skillet to the preheated oven and roast for about 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
While the pork is roasting, combine blueberries, balsamic vinegar, and honey in a saucepan. Cook over medium heat until the blueberries break down and the sauce thickens, about 10 minutes.
Remove the pork from the oven and let it rest for 5 minutes before slicing.
Serve the sliced pork tenderloin with the blueberry reduction sauce drizzled on top.
