  • 1 lb Pork tenderloin
  • 1 cup Fresh blueberries
  • ¼ cup Balsamic vinegar
  • ¼ cup Honey
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Season the pork tenderloin with salt and black pepper.
  3. Heat olive oil in a skillet over medium-high heat. Sear the pork on all sides until browned.
  4. Transfer the skillet to the preheated oven and roast for about 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
  5. While the pork is roasting, combine blueberries, balsamic vinegar, and honey in a saucepan. Cook over medium heat until the blueberries break down and the sauce thickens, about 10 minutes.
  6. Remove the pork from the oven and let it rest for 5 minutes before slicing.
  7. Serve the sliced pork tenderloin with the blueberry reduction sauce drizzled on top.
