Instructions
Preheat your oven to 375°F (190°C).
Season the pork tenderloin with salt and pepper.
Heat olive oil in a pan over medium-high heat and sear the pork on all sides until browned.
Transfer the pork to a baking sheet and roast in the oven for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
In a saucepan, combine the berries, honey, and balsamic vinegar. Cook over medium heat until the berries break down and the sauce thickens.
Let the pork rest for 5 minutes, then slice and serve with the berry glaze drizzled on top.
