Pie Crust
- 2 cups All-purpose flour
- 1 cup Lard cold
- 1 teaspoon Salt
- ½ cup Water cold
Filling
- 1 lb Pork shoulder diced
- 1 teaspoon Salt
- ½ teaspoon Black pepper ground
- ½ teaspoon Nutmeg ground
- ½ teaspoon Sage dried
- 1 cup Chicken stock
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine flour and salt. Cut in the lard until the mixture resembles coarse crumbs. Add cold water a little at a time until dough forms. Wrap in plastic and refrigerate.
In another bowl, mix diced pork, salt, pepper, nutmeg, and sage.
Roll out half of the dough and line a pie tin. Fill with the pork mixture. Roll out the remaining dough and cover the pie. Seal and crimp the edges.
Make a small hole in the center of the pie to allow steam to escape. Bake for 90 minutes or until golden brown.
Let the pie cool slightly before serving. Enjoy!
