Ingredients 

Main Ingredients

  • 4 lb Pork Picnic Roast
  • 2 cups Chicken Broth
  • 1 large Onion sliced
  • 4 cloves Garlic minced
  • 3 large Carrots cut into chunks
  • 4 large Potatoes cut into chunks
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 teaspoon Dried Thyme

Instructions 

  1. 1. Preheat your oven to 325°F (165°C).
  2. 2. Heat the olive oil in a Dutch oven over medium-high heat.
  3. 3. Season the pork roast with salt and pepper, then brown it on all sides in the Dutch oven.
  4. 4. Remove the pork and set it aside. Add the onions and garlic to the pot and sauté until softened.
  5. 5. Return the pork to the pot, add the chicken broth, carrots, potatoes, and thyme.
  6. 6. Cover the pot and place it in the oven. Cook for about 4 hours, or until the pork is tender.
  7. 7. Serve hot, with the vegetables and some of the cooking liquid.
