Ingredients 

Main Ingredients

  • 1 lb Pork tenderloin cut into medallions
  • 2 tablespoon Olive oil
  • ¼ cup Balsamic vinegar
  • 2 tablespoon Capers drained
  • to taste Salt and pepper

Instructions 

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season pork medallions with salt and pepper.
  3. Cook pork medallions in the skillet for about 3-4 minutes on each side, until browned and cooked through.
  4. Remove pork from skillet and set aside.
  5. Add balsamic vinegar and capers to the skillet, scraping up any browned bits from the bottom.
  6. Return pork to the skillet and cook for another 2 minutes, until sauce is slightly reduced.
  7. Serve pork medallions with the balsamic and caper sauce drizzled over the top.
