Ingredients 

Main Ingredients

  • 1 lb Pork shoulder shredded
  • 8 Corn tortillas
  • 2 cups Enchilada sauce
  • 1 cup Shredded cheese cheddar or Mexican blend
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 tablespoon Olive oil
  • to taste Salt and pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add shredded pork, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Cook until heated through.
  3. Warm the tortillas in the microwave or on a skillet until pliable.
  4. Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  5. Fill each tortilla with the pork mixture, roll them up, and place them seam-side down in the baking dish.
  6. Pour the remaining enchilada sauce over the top of the rolled tortillas and sprinkle with shredded cheese.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Let cool for a few minutes before serving.
