Ingredients 

Main Ingredients

  • 2 lbs pork shoulder cut into chunks
  • 1 tablespoon olive oil
  • 1 large onion diced
  • 4 cloves garlic minced
  • 2 jalapeños seeded and chopped
  • 1 lb tomatillos husked and quartered
  • 2 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 bunch cilantro chopped
  • to taste salt and pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat. Add the pork and brown on all sides.
  2. Add the onion, garlic, and jalapeños to the pot. Cook until the onion is translucent.
  3. In a blender, combine the tomatillos and chicken broth. Blend until smooth.
  4. Pour the tomatillo mixture into the pot. Add the cumin, oregano, and cilantro. Stir well.
  5. Bring to a boil, then reduce heat and simmer for about 1.5 hours, or until the pork is tender.
  6. Season with salt and pepper to taste. Serve hot.
