Main Ingredients
- 4 Peaches ripe but firm
- 1 cup Sugar
- 2 cups Water
- 1 Vanilla bean split
- 1 Lemon zested and juiced
1. In a saucepan, combine water, sugar, vanilla bean, lemon zest, and lemon juice. Bring to a simmer.
2. Add peaches to the simmering liquid. Poach for about 15-20 minutes until tender.
3. Remove peaches with a slotted spoon. Let cool slightly before peeling and serving.
