Ingredients

  • 1 cup shelled pistachios unsalted
  • 2 cups whole milk
  • 1 cup heavy cream
  • ¾ cup granulated sugar
  • 4 large egg yolks
  • 1 teaspoon vanilla extract

Instructions 

  1. 1. Blend pistachios until finely ground.
  2. 2. In a saucepan, heat milk and cream until just simmering.
  3. 3. Whisk egg yolks and sugar until pale and thick.
  4. 4. Gradually add hot milk mixture to egg yolks, whisking constantly.
  5. 5. Return mixture to saucepan and cook over low heat until thickened.
  6. 6. Stir in ground pistachios and vanilla extract.
  7. 7. Chill mixture in the refrigerator for at least 4 hours.
  8. 8. Churn in an ice cream maker according to manufacturer’s instructions.
