Main Ingredients

  • 1 cup shelled pistachios
  • 1 cup all-purpose flour
  • ½ cup almond flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup whole milk

Instructions 

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a food processor, grind pistachios until fine.
  3. In a bowl, mix ground pistachios, all-purpose flour, almond flour, baking powder, baking soda, and salt.
  4. In another bowl, beat butter and sugar until fluffy. Add eggs one at a time, then vanilla.
  5. Gradually add dry ingredients to wet, alternating with milk.
  6. Pour batter into pan and bake for 30 minutes or until a toothpick comes out clean.
  7. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
