Pineapple Upside Down Cupcakes

Ingredients

  • ¼ cup Butter melted
  • ½ cup Brown sugar
  • 12 rings Pineapple canned, drained
  • 12 pieces Maraschino cherries
  • 1 box Yellow cake mix prepared according to package instructions

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, mix the melted butter and brown sugar. Spoon about 1 tablespoon of this mixture into the bottom of each muffin cup.
  3. Place a pineapple ring in each muffin cup and put a maraschino cherry in the center of each pineapple ring.
  4. Prepare the cake mix according to the package instructions. Pour the batter over the pineapple rings, filling each muffin cup about ⅔ full.
  5. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cupcakes cool in the pan for about 5 minutes, then run a knife around the edges to loosen them. Invert the pan onto a baking sheet or large plate to remove the cupcakes.
