Dough
- 250 g all-purpose flour
- 50 g cornstarch
- 200 g butter cold and cubed
- 50 g icing sugar
- 2 egg yolks
- 1 teaspoon vanilla extract
Filling
- 500 g pineapple jam store-bought or homemade
Preheat oven to 350°F (175°C).
In a mixing bowl, combine flour and cornstarch.
Add cold butter and rub into the flour mixture until it resembles breadcrumbs.
Mix in icing sugar, egg yolks, and vanilla extract to form a dough.
Roll the dough into small balls and flatten them slightly.
Place a small amount of pineapple jam in the center of each dough piece and shape into tarts.
Arrange the tarts on a baking tray and bake for 20 minutes or until golden brown.
Let cool before serving.
