Ingredients 

Dough

  • 250 g all-purpose flour
  • 50 g cornstarch
  • 200 g butter cold and cubed
  • 50 g icing sugar
  • 2 egg yolks
  • 1 teaspoon vanilla extract

Filling

  • 500 g pineapple jam store-bought or homemade

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and cornstarch.
  3. Add cold butter and rub into the flour mixture until it resembles breadcrumbs.
  4. Mix in icing sugar, egg yolks, and vanilla extract to form a dough.
  5. Roll the dough into small balls and flatten them slightly.
  6. Place a small amount of pineapple jam in the center of each dough piece and shape into tarts.
  7. Arrange the tarts on a baking tray and bake for 20 minutes or until golden brown.
  8. Let cool before serving.
