  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1 cup water
  • 1 tablespoon lemon juice
  • 1 cup whipped cream

Instructions 

  1. In a saucepan, combine sugar and cornstarch. Add water and stir until smooth. Cook over medium heat, stirring constantly, until thickened and bubbly.
  2. Remove from heat and stir in lemon juice and drained pineapple. Let cool.
  3. Fold in whipped cream. Pour mixture into pre-baked pie crust.
  4. Chill in the refrigerator for at least 2 hours before serving.
