Ingredients

  • 2 cups Cooked Rice preferably day-old
  • 1 cup Pineapple diced
  • 2 tablespoon Soy Sauce
  • 1 tablespoon Fish Sauce
  • 2 tablespoon Vegetable Oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 Bell Pepper chopped
  • 2 Eggs beaten
  • 2 tablespoon Green Onions chopped
  • 1 Lime cut into wedges
  • Cilantro for garnish

Instructions 

  1. 1. Heat oil in a wok over medium heat. Add garlic and onion, stir-fry until fragrant.
  2. 2. Add bell pepper and cook for 2-3 minutes. Push veggies to the side and pour in beaten eggs. Scramble until cooked.
  3. 3. Add rice, pineapple, soy sauce, and fish sauce. Stir-fry for 5-7 minutes until everything is well mixed and heated through.
  4. 4. Stir in green onions. Serve hot, garnished with cilantro and lime wedges.
