Ingredients 

Crust

  • 1.5 cups Graham cracker crumbs
  • ¼ cup Sugar
  • ½ cup Melted butter

Filling

  • 24 oz Cream cheese softened
  • 1 cup Sugar
  • 1 teaspoon Vanilla extract
  • 3 Eggs
  • 1 cup Crushed pineapple drained

Instructions 

  1. Preheat oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
  3. In another bowl, beat the cream cheese and sugar until smooth. Add vanilla extract and eggs one at a time, beating well after each addition.
  4. Fold in the crushed pineapple. Pour the filling over the crust.
  5. Bake for 60 minutes or until the center is set. Let cool, then refrigerate for at least 4 hours before serving.
