Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a mixing bowl, break the almond paste into small pieces. Add the sugar and mix until well combined.
Add the egg whites, vanilla extract, and salt. Mix until a sticky dough forms.
Drop teaspoon-sized balls of dough onto the prepared baking sheet. Press a few pine nuts onto the top of each cookie.
Bake for 15-20 minutes, or until the cookies are golden brown. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
