Ingredients

  • 2 cups penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup zucchini, sliced
  • 1 cup bell peppers, sliced
  • 2 cloves garlic, minced
  • 2 tablespoon olive oil
  • Salt and pepper to taste
  • ¼ cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions 

  1. Cook penne pasta according to package instructions. Drain and set aside.
  2. In a large pan, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add cherry tomatoes, zucchini, and bell peppers. Cook until vegetables are tender.
  4. Add cooked penne pasta to the pan. Toss to combine.
  5. Season with salt and pepper. Sprinkle with grated Parmesan cheese.
  6. Garnish with fresh basil before serving.
