Cook the rice noodles according to package instructions. Drain and set aside.
Steam the broccoli florets until tender, about 5 minutes. Set aside.
In a mixing bowl, whisk together peanut butter, soy sauce, lime juice, honey, garlic, ginger, and water until smooth.
In a large pan, heat sesame oil over medium heat. Add the cooked noodles and broccoli, then pour the peanut sauce over. Toss to combine and heat through.
Garnish with sesame seeds and green onions. Serve warm.
