Ingredients

  • ½ cup unsalted butter softened
  • ½ cup granulated sugar
  • ½ cup brown sugar packed
  • ½ cup peanut butter creamy
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 24 pieces miniature peanut butter cups unwrapped

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, cream together the butter, granulated sugar, brown sugar, and peanut butter until smooth.
  3. Beat in the egg and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until combined.
  5. Shape dough into 1-inch balls and place them on an ungreased baking sheet.
  6. Bake for 8-10 minutes or until edges are lightly browned.
  7. Immediately press a miniature peanut butter cup into the center of each cookie. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
