Ingredients 

Pie Crust

  • 2 cups all-purpose flour
  • 1 cup unsalted butter cold and cubed
  • ¼ cup ice water

Filling

  • 6 cups sliced peaches peeled
  • 1 cup granulated sugar
  • ¼ cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon lemon juice freshly squeezed

Instructions 

  1. Preheat oven to 425°F (220°C).
  2. In a mixing bowl, combine flour and butter. Add ice water and mix until dough forms. Divide dough in half, shape into discs, and refrigerate for 30 minutes.
  3. Roll out one disc of dough and fit into a pie dish. In another bowl, mix peaches, sugar, flour, cinnamon, nutmeg, and lemon juice. Pour filling into pie crust.
  4. Roll out the second disc of dough and place over filling. Trim and crimp edges, then cut slits in the top crust.
  5. Bake for 45-50 minutes or until crust is golden brown. Let cool before serving.
