Ingredients 

Crust

  • 1.5 cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup butter, melted

Filling

  • 3 packages cream cheese, softened 8 oz each
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 eggs

Topping

  • 2 cups sliced peaches fresh or canned
  • ¼ cup brown sugar
  • ½ teaspoon cinnamon

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of a springform pan.
  3. In another bowl, beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, beating well after each addition. Pour over crust.
  4. In a small bowl, mix peaches, brown sugar, and cinnamon. Spoon over cheesecake filling.
  5. Bake for 60 minutes or until center is set. Cool before removing from pan. Refrigerate for at least 4 hours before serving.
