Ingredients

  • 2 cups fresh or frozen peas
  • ½ cup grated Parmesan cheese
  • ¼ cup pine nuts toasted
  • 2 cloves garlic minced
  • ¼ cup olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • to taste salt and pepper

Instructions 

  1. 1. In a food processor, combine peas, Parmesan cheese, pine nuts, and garlic.
  2. 2. Pulse until the mixture is coarsely chopped.
  3. 3. With the processor running, gradually add olive oil and lemon juice until the mixture is smooth.
  4. 4. Season with salt and pepper to taste.
  5. 5. Serve immediately or store in an airtight container in the refrigerator for up to 3 days.
