  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 eggs beaten
  • to taste Salt and pepper
  • 2 tablespoon olive oil

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix Parmesan cheese and breadcrumbs.
  3. In another bowl, beat the eggs.
  4. Season chicken breasts with salt and pepper.
  5. Dip chicken in eggs, then coat with Parmesan mixture.
  6. Heat olive oil in a pan over medium heat.
  7. Cook chicken until golden brown, about 2-3 minutes per side.
  8. Transfer chicken to a baking sheet and bake for 15-20 minutes.
