Ingredients

  • 1 cup rolled oats
  • 1 ¼ cups boiling water
  • ½ cup butter
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 ⅓ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking pan.
  2. In a bowl, combine oats and boiling water. Let sit for 20 minutes.
  3. In another bowl, cream together butter, brown sugar, and granulated sugar. Beat in eggs one at a time.
  4. Stir in soaked oats.
  5. In a separate bowl, sift together flour, baking soda, salt, cinnamon, and nutmeg. Gradually add to the oat mixture.
  6. Stir in vanilla extract.
  7. Pour batter into the prepared pan.
  8. Bake for 35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool before serving.
