  • 2 cups Quinoa
  • 1 cup Chopped Vegetables Mixed bell peppers, carrots, and peas
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a pan, heat the olive oil over medium heat.
  3. 3. Add the chopped vegetables and sauté for 5 minutes.
  4. 4. Add the quinoa to the pan and stir well.
  5. 5. Pour in 4 cups of water, add salt and pepper, and bring to a boil.
  6. 6. Reduce the heat, cover, and simmer for 15 minutes or until the quinoa is cooked.
  7. 7. Fluff the quinoa with a fork and serve hot.
