Ingredients 

Crust

  • 1.5 cups Graham cracker crumbs
  • ¼ cup Sugar
  • ½ cup Melted butter

Filling

  • 4 packages Cream cheese, softened 8 oz each
  • 1 cup Sugar
  • 1 cup Sour cream
  • 1 teaspoon Vanilla extract
  • 4 Large eggs

Instructions 

  1. Preheat oven to 325°F (163°C).
  2. Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press into the bottom of a springform pan.
  3. In a large bowl, beat the cream cheese and sugar until smooth. Add sour cream and vanilla, and mix well. Add eggs one at a time, mixing on low speed until just blended. Pour over crust.
  4. Bake for 1 hour and 30 minutes, or until the center is almost set. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour.
  5. Refrigerate for at least 4 hours or overnight before serving.
