Nanaimo Bars Recipe

A classic Canadian dessert with layers of chocolate, custard, and coconut-graham crust.

Ingredients 

Crust

  • ½ cup unsalted butter melted
  • ¼ cup granulated sugar
  • cup unsweetened cocoa powder
  • 1 large egg beaten
  • 1 ¾ cups graham cracker crumbs
  • 1 cup sweetened shredded coconut

Custard Layer

  • ½ cup unsalted butter softened
  • 2 cups powdered sugar
  • 2 tablespoon vanilla custard powder
  • 3 tablespoon milk

Chocolate Topping

  • 4 oz semi-sweet chocolate chopped
  • 2 tablespoon unsalted butter

Instructions 

  1. 1. In a saucepan, melt butter over low heat. Stir in sugar and cocoa powder until smooth. Remove from heat and whisk in the beaten egg. Return to heat and cook until thickened. Remove from heat and stir in graham cracker crumbs and coconut. Press mixture into the bottom of an ungreased 8x8 inch baking pan.
  2. 2. For the custard layer, beat together butter, powdered sugar, custard powder, and milk until smooth. Spread over the crust layer and refrigerate until firm.
  3. 3. For the chocolate topping, melt chocolate and butter together in a saucepan over low heat. Spread over the custard layer. Chill in refrigerator until set. Cut into bars and serve.
