Instructions
Heat the olive oil in a large skillet over medium heat.
Add the chopped onion and cook until softened, about 5 minutes.
Add the minced garlic and cook for another minute.
Add the sliced mushrooms and cook until they release their juices and become tender, about 10 minutes.
Pour in the vegetable broth and bring to a simmer.
Stir in the sour cream and Dijon mustard, and cook until the sauce is thickened, about 5 minutes.
Season with salt and pepper to taste.
Garnish with chopped fresh parsley before serving.
