Ingredients

  • 8 eggs
  • 1 cup sliced mushrooms
  • 2 cups fresh spinach
  • ½ cup grated Parmesan cheese
  • 1 small onion, diced
  • 2 tablespoon olive oil
  • Salt and pepper to taste

Instructions 

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. In an oven-safe skillet, heat olive oil over medium heat. Add the diced onion and cook until translucent.
  3. 3. Add the sliced mushrooms and cook until they release their moisture and start to brown.
  4. 4. Add the fresh spinach and cook until wilted. Season with salt and pepper.
  5. 5. In a mixing bowl, whisk the eggs and grated Parmesan cheese together. Pour the egg mixture over the vegetables in the skillet.
  6. 6. Cook on the stovetop for a few minutes until the edges start to set, then transfer the skillet to the preheated oven.
  7. 7. Bake for 15-20 minutes, or until the frittata is fully set and golden on top.
  8. 8. Remove from the oven and let it cool slightly before slicing and serving.
