Ingredients 

Main Ingredients

  • 2 large eggplants
  • 500 g ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 400 g canned tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cinnamon
  • to taste salt and pepper

Béchamel Sauce

  • 50 g butter
  • 50 g flour
  • 500 ml milk
  • 1 pinch nutmeg
  • 1 egg yolk

Instructions 

  1. 1. Preheat oven to 375°F (190°C).
  2. 2. Slice eggplants, sprinkle with salt, and let sit for 30 minutes. Rinse and pat dry.
  3. 3. In a skillet, cook ground beef, onion, and garlic until browned. Add tomatoes, oregano, cinnamon, salt, and pepper. Simmer for 20 minutes.
  4. 4. In a saucepan, melt butter, add flour, and cook for 1 minute. Gradually add milk, stirring constantly until thickened. Add nutmeg and egg yolk.
  5. 5. Layer eggplant slices and meat sauce in a baking dish. Top with béchamel sauce.
  6. 6. Bake for 45 minutes until golden brown. Let cool for 10 minutes before serving.
