Ingredients 

Main Ingredients

  • 4 pieces Chicken Thighs bone-in, skin-on
  • 1 tablespoon Olive Oil
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Ground Ginger
  • 1 teaspoon Paprika
  • 1 cup Chicken Broth
  • 1 cup Chopped Tomatoes canned
  • 1 cup Chickpeas canned, drained
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black Pepper to taste
  • 0.25 cup Fresh Cilantro chopped

Instructions 

  1. 1. Heat olive oil in a large skillet over medium heat.
  2. 2. Add chicken thighs and cook until browned on both sides. Remove and set aside.
  3. 3. In the same skillet, add chopped onion and garlic. Cook until softened.
  4. 4. Stir in cumin, cinnamon, ginger, and paprika. Cook for another minute.
  5. 5. Add chicken broth, chopped tomatoes, and chickpeas. Bring to a simmer.
  6. 6. Return chicken thighs to the skillet. Cover and cook for 20-25 minutes, until chicken is cooked through.
  7. 7. Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
