Cookies
- 1 cup All-purpose flour
- ½ cup Sugar
- ½ cup Butter softened
- 1 teaspoon Vanilla extract
- 1 unit Egg
- ½ teaspoon Baking powder
- ¼ teaspoon Salt
Coating
- 1 cup Chocolate chips
- 1 tablespoon Vegetable oil
Preheat oven to 350°F (175°C).
In a mixing bowl, cream together the butter and sugar until light and fluffy.
Beat in the egg and vanilla extract.
In another bowl, whisk together the flour, baking powder, and salt. Gradually add to the butter mixture, mixing until combined.
Drop dough by tablespoonfuls onto a baking sheet. Flatten slightly with the back of a spoon.
Bake for 10-12 minutes or until edges are golden. Cool on wire racks.
Spread marshmallow fluff on the flat side of half the cookies. Top with remaining cookies.
In a double boiler, melt chocolate chips and vegetable oil until smooth. Dip each cookie sandwich in chocolate, covering completely. Place on wax paper to set.
