Mock Apple Pie Recipe
A delicious pie that tastes just like apple pie, but without any apples!

Crust
- 2 cups All-purpose flour
- 1 cup Shortening
- ½ teaspoon Salt
- ¼ cup Cold water
Filling
- 36 pieces Ritz crackers Crushed
- 2 cups Water
- 2 cups Sugar
- 2 teaspoons Cream of tartar
- 1 tablespoon Lemon juice
- 1 teaspoon Ground cinnamon
- 2 tablespoons Butter Cut into small pieces
Preheat oven to 425°F (220°C).
In a mixing bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Add water, 1 tablespoon at a time, until dough forms a ball. Divide dough in half and shape into disks. Wrap in plastic wrap and refrigerate for 30 minutes.
Roll out one disk of dough on a lightly floured surface to fit a 9-inch pie dish. Place crust in pie dish and set aside.
In a saucepan, bring water, sugar, and cream of tartar to a boil. Add crushed Ritz crackers and cook for 2 minutes. Remove from heat and stir in lemon juice and cinnamon. Pour mixture into pie crust and dot with butter.
Roll out remaining dough and place over filling. Trim, seal, and flute edges. Cut slits in top crust to allow steam to escape.
Bake in preheated oven for 30 minutes or until crust is golden brown. Cool on a wire rack before serving.
