Ingredients 

Main Ingredients

  • 4 cups vegetable broth
  • 2 tablespoons miso paste
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 200 g firm tofu, cubed
  • 2 packs ramen noodles
  • 1 cup sliced mushrooms
  • 1 cup baby spinach
  • 2 green onions sliced
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil

Instructions 

  1. Heat vegetable oil in a pot over medium heat. Add garlic and ginger, sauté for 2 minutes.
  2. Add vegetable broth, miso paste, and soy sauce. Stir well and bring to a simmer.
  3. Add mushrooms and tofu. Cook for 10 minutes.
  4. In a separate pot, cook ramen noodles according to package instructions. Drain and set aside.
  5. Add spinach to the broth and cook for 2 minutes.
  6. Divide noodles into bowls, pour broth over noodles, and top with green onions and a drizzle of sesame oil.
