Main Ingredients
- 4 cups vegetable broth
- 2 tablespoons miso paste
- 1 tablespoon soy sauce
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 200 g firm tofu, cubed
- 2 packs ramen noodles
- 1 cup sliced mushrooms
- 1 cup baby spinach
- 2 green onions sliced
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
Heat vegetable oil in a pot over medium heat. Add garlic and ginger, sauté for 2 minutes.
Add vegetable broth, miso paste, and soy sauce. Stir well and bring to a simmer.
Add mushrooms and tofu. Cook for 10 minutes.
In a separate pot, cook ramen noodles according to package instructions. Drain and set aside.
Add spinach to the broth and cook for 2 minutes.
Divide noodles into bowls, pour broth over noodles, and top with green onions and a drizzle of sesame oil.
