Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 zucchini diced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 can kidney beans, drained and rinsed
  • 1 can cannellini beans, drained and rinsed
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 cup small pasta (like ditalini)
  • to taste salt and pepper
  • 2 cups fresh spinach
  • ¼ cup grated Parmesan cheese (optional)

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until softened.
  2. Add carrots, celery, and zucchini. Cook for about 5 minutes.
  3. Stir in diced tomatoes and vegetable broth. Bring to a boil.
  4. Add beans, oregano, and basil. Reduce heat and simmer for 20 minutes.
  5. Add pasta and cook until tender, about 10 minutes. Season with salt and pepper.
  6. Stir in spinach until wilted. Serve hot, topped with Parmesan cheese if desired.
