  • 1 cup Diced Tomatoes

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring 4 cups of water to a boil. Add the quinoa and cook for 15 minutes.
  3. 3. In a mixing bowl, combine the cooked quinoa, chopped spinach, diced tomatoes, olive oil, salt, and black pepper.
