- 1 cup Butter softened
- 1 cup Sugar
- 2 units Eggs
- 1 cup Mincemeat
- 2 cups All-purpose flour
- 1 teaspoon Baking soda
- 1 teaspoon Salt
Preheat oven to 350°F (175°C).
In a mixing bowl, cream together the butter and sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the mincemeat.
Combine the flour, baking soda, and salt; gradually stir into the mincemeat mixture.
Drop by rounded spoonfuls onto ungreased baking sheets.
Bake for 10 to 12 minutes in the preheated oven, until cookies are set.
Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
