Shortbread Layer
- 250 g plain flour
- 75 g caster sugar
- 175 g butter cold and cubed
Caramel Layer
- 100 g butter
- 100 g brown sugar
- 397 g sweetened condensed milk 1 can
Chocolate Layer
- 200 g dark chocolate broken into pieces
Preheat your oven to 180°C (350°F) and line a baking tin with parchment paper.
In a mixing bowl, combine the flour and caster sugar. Rub in the cold, cubed butter until the mixture resembles breadcrumbs. Press this mixture into the base of the prepared tin and bake for 20 minutes or until golden. Let it cool.
For the caramel layer, melt the butter and brown sugar in a saucepan over low heat. Add the condensed milk and bring to a boil, stirring continuously. Cook for 5-7 minutes until thickened. Pour over the cooled shortbread and let it set.
Melt the dark chocolate in a heatproof bowl over simmering water. Pour over the set caramel layer and smooth out. Let it cool and set completely before cutting into squares.
