  • 3 units Meyer lemons zested and juiced
  • 1 cup sugar
  • 3 units eggs large
  • ½ cup unsalted butter cut into pieces

Instructions 

  1. In a saucepan, combine lemon juice, zest, sugar, and eggs. Whisk to combine.
  2. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
  3. Remove from heat and stir in butter until melted and smooth.
  4. Strain the curd through a fine-mesh strainer into a bowl. Let cool.
  5. Refrigerate until ready to use.
