- 2 cups Corn kernels fresh or frozen
- 1 cup Cotija cheese crumbled
- ¼ cup Mayonnaise
- 1 tablespoon Chili powder
- 2 tablespoon Lime juice freshly squeezed
- ¼ cup Cilantro chopped
Heat a skillet over medium heat and add the corn kernels. Cook until slightly charred, about 5-7 minutes.
In a mixing bowl, combine the charred corn, mayonnaise, chili powder, lime juice, and cilantro. Mix well.
Top with crumbled Cotija cheese and serve immediately.
