Mexican Street Cornbread Recipe
A delicious twist on traditional cornbread with flavors inspired by Mexican street corn.

Main Ingredients
- 1 cup Cornmeal
- 1 cup All-purpose flour
- ¼ cup Sugar
- 1 tablespoon Baking powder
- ½ teaspoon Salt
- 1 cup Milk
- ¼ cup Vegetable oil
- 1 large Egg
- 1 cup Corn kernels (fresh or frozen)
- ½ cup Crumbled cotija cheese
- ¼ cup Chopped cilantro
- 1 teaspoon Chili powder
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine cornmeal, flour, sugar, baking powder, and salt.
In another bowl, whisk together milk, vegetable oil, and egg.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Fold in the corn kernels, cotija cheese, cilantro, and chili powder.
Pour the batter into a greased baking dish.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
