Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups vegetable broth
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 cup diced tomatoes with juices
  • 1 medium bell pepper diced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper or to taste
  • 1 lime juiced
  • ¼ cup cilantro chopped

Instructions 

  1. 1. In a saucepan, combine quinoa and vegetable broth. Bring to a boil.
  2. 2. Reduce heat, cover, and simmer for 15 minutes or until quinoa is cooked.
  3. 3. In a large bowl, combine cooked quinoa, black beans, corn, tomatoes, and bell pepper.
  4. 4. Add chili powder, cumin, garlic powder, salt, and black pepper. Mix well.
  5. 5. Stir in lime juice and chopped cilantro. Serve warm or chilled.
