Ingredients 

Main Ingredients

  • 1 lb Ground beef
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 packet Taco seasoning
  • 1 can Black beans, drained and rinsed
  • 1 can Corn, drained
  • 2 cups Salsa
  • 2 cups Shredded cheese
  • 12 Corn tortillas

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, cook ground beef, onion, and garlic over medium heat until beef is browned. Drain excess fat.
  3. Add taco seasoning, black beans, corn, and salsa to the skillet. Stir to combine.
  4. In a baking dish, layer 4 tortillas, half of the beef mixture, and 1 cup of cheese. Repeat layers, ending with tortillas and cheese on top.
  5. Bake in preheated oven for 30-40 minutes, until cheese is melted and bubbly.
  6. Let stand for 5 minutes before serving.
