Ingredients

  • 1 cup Cornmeal
  • 1 cup All-purpose flour
  • 1 tablespoon Baking powder
  • 1 teaspoon Salt
  • 1 cup Milk
  • 2 Eggs beaten
  • ¼ cup Vegetable oil
  • 1 cup Corn kernels fresh or frozen
  • 1 cup Cheddar cheese shredded
  • 1 can Green chilies diced

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine cornmeal, flour, baking powder, and salt.
  3. In another bowl, mix milk, eggs, and vegetable oil.
  4. Combine wet and dry ingredients, then fold in corn, cheese, and chilies.
  5. Pour batter into a greased baking pan.
  6. Bake for 30 minutes or until golden brown.
  7. Let cool before serving.
