Ingredients

  • 4 whole wheat pitas
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red onion, thinly sliced
  • ½ cup kalamata olives, pitted and sliced
  • ½ cup feta cheese, crumbled
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • to taste salt and pepper

Instructions 

  1. 1. In a mixing bowl, combine cherry tomatoes, cucumber, red onion, kalamata olives, and feta cheese.
  2. 2. Drizzle with olive oil and lemon juice. Sprinkle with dried oregano, salt, and pepper. Toss to combine.
  3. 3. Cut the pitas in half and gently open the pockets.
  4. 4. Stuff the pita halves with the veggie mixture.
  5. 5. Serve immediately and enjoy!
