Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ¼ cup red onion finely chopped
  • ¼ cup kalamata olives sliced
  • ¼ cup feta cheese crumbled

Dressing

  • ¼ cup olive oil
  • 1 unit lemon juiced
  • 1 clove garlic minced
  • 1 teaspoon dried oregano
  • to taste salt and pepper

Instructions 

  1. 1. Rinse quinoa under cold water.
  2. 2. In a saucepan, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes or until water is absorbed. Let it cool.
  3. 3. In a large mixing bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  4. 4. In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  5. 5. Pour dressing over salad and toss to combine. Serve chilled or at room temperature.
