Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 0.25 cup red onion finely chopped
  • 0.25 cup Kalamata olives pitted and sliced
  • 0.25 cup feta cheese crumbled
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions 

  1. Rinse quinoa under cold water.
  2. In a pot, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
  3. Fluff quinoa with a fork and let it cool.
  4. In a large bowl, combine quinoa, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  5. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  6. Pour dressing over the quinoa mixture and toss to combine.
